The 5-Minute Greek Salad I Can’t Stop Making

One of my all-time favorite summer lunches is a classic Greek salad. It’s fresh, light, easy to put together, and extremely versatile. So when I first came across a recipe for another easy Greek salad—maroulosalata—on TikTok, I knew I had to give it a try. 

The result was so delicious, and with even fewer ingredients than the classic Greek salad, it quickly became another summer go-to. The ultra-quick recipe is versatile and the bright, fresh flavor and crisp texture always hit the spot. 

What Is Maroulosalata?

Maroulosalata is a Greek lettuce salad, typically made with romaine lettuce, fresh herbs, and feta cheese, all tossed in a simple Greek salad dressing. It’s a light, fresh salad that can be served on the side of a bigger spread or step into the spotlight as a refreshing main for lunch or dinner.

There are many different variations of this Greek lettuce salad out there. My version aims to keep the ingredients and prep to a minimum for the quickest possible recipe that stays true to the salad’s crisp, fresh flavors.

How To Make My 5-Minute Greek Salad

For four to six servings, you’ll need:

  • 1 English cucumber, quartered lengthwise and thinly sliced
  • 2 scallions, thinly sliced
  • 3 tablespoons finely chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper, plus more to taste
  • 4 ounces feta cheese
  • 1 lemon
  • 2 hearts romaine lettuce, cored and roughly chopped
  • 1/4 cup olive oil
  • Salt, to taste

Add the cucumber to a large bowl with the scallions, dill, and black pepper. Use your hands to crumble the feta cheese over the top. Halve the lemon and juice half into the bowl, tossing the ingredients to combine.

Add the shredded lettuce to the bowl, drizzle with olive oil, and toss to combine. Taste and season with salt, more black pepper, and lemon juice as desired before serving.

Easy Recipe Variations

If you browse maroulosalata recipes online, you’ll find many different ways of making it, so variation is more than possible here. If you need ideas for switching it up, here are some of my favorites:

  • Add another lettuce to the mix, like arugula, spinach, or watercress
  • Use smaller, sweeter Persian cucumbers instead of English
  • Use a mix of fresh dill, mint, and parsley
  • Add sliced red onion, tomatoes, or bell pepper
  • Finish with a splash of red wine vinegar or a sprinkle of dried oregano
  • Toss in shredded or cubed chicken, chickpeas, or toasted breadcrumbs to make it heartier
